Release Notes
West Cork Irish Whiskey – Cask Finishes (43% abv/86 proof) – A limited release of 12YO Single Malt Irish whiskey aged in first fill Bourbon casks for 12 years and finished for circa 110 days in rum, sherry (Pedro Ximinez) or port (Douro Superior) casks. WCD polish matures in selected casks for a shorter period than other distilleries to avoid overpowering the bourbon cask maturation.

The West Cork distillery started as a pet project by John O’ Connell, Denis McCarthy and Ger McCarthy in 2003 in Union Hall, West Cork. In 2013 after much expansion WCD moved to a larger distillery in Skibbereen, West Cork where it now resides. It now operates as only one of the few independent distilleries in Ireland. A trio of limited 12 year old releases has just trickled into the U.S. and we've been told this will be it as far as inventory until late in 2018. Each finished in a different type of cask (port, sherry, and rum), the soft and creamy Irish whisky takes on just a bit of the character from the barrel it was matured in. The port cask release offers a subtle tinge of red fruit and sweet dessert flavor on the finish, but the influence is very delicate and refined.

In 2003 an experienced food and drinks engineer had a dream to open his own distillery. Having spent years working in the food and drinks industry as a mad scientist he imagined he could turn his talents to something more tasteful. His two friends, life long fishermen, had hit troubled waters and lost their livelihoods in a depressed fisheries business. Circumstance had now bought them together and the 3 men decided it was time to go for a drink. The 3 friends sat at the bar and it was the beginning of a great story and a wonderful journey. That night West Cork Distillers was born.

The Distillery started in Union Hall in 2003 and in April 2004 the first bottle of Kennedy’s Irish Whiskey went down the line. Since then we have gone from strength to strength establishing ourselves as leaders in technology and innovation. In 2013 we moved The Distillery to a new larger premise in Skibbereen, West Cork which has allowed us to expand to meet the growing demand for our products. WCD produces Irish whiskey (blended, pot still and single malt), poitin, vodka and gin. WCD are one of very few distilleries in Ireland to use spring water (non municipal water in the production) and only to process barley and wheat. We are also the only distillery in Ireland to malt our own barley. WCD now sells in over 35 countries worldwide and this is growing all the time.
