Release Notes
Michel Couvreur is a Belgian and an independent bottler of single malt scotch. His cellars are located in Bouze-les-Beaune in the heart of Burgundy. Michel ages his single malts for years in sherry butts and then in demijohns or giant bottles kept in total darkness in the exceptional well-protected underground galleries of Bouze-les-Beaune. The Pale-Single is a lighter style of whisky, not nearly as heavily sherried as his other expressions, that is quite fruity and floral in flavor, but with a lingering note of toasted almonds and savory richness.

Nose: sherry, caramel
Taste: salted caramel

Nose: apple pie, a hint of bubblegum, maple syrup
Taste: a bit watery, kind of bland, but tasty nonethelesss
Finish: a little smoke on the finish that lingers, a hint of dried cherry
Balance: extremely consistent, somehow mediocre and exceptional simultaneously

Nose: sweet caramel, nougat, but faint
Taste: sweet stone fruit, warm and powerful
Finish: blunt finish, hit of pepper, but disappointing
Balance: lovely if irregular dram, the best is up front

Nose: nutty, perhaps almonds
Taste: vanilla cream, but easily overpowered by the alcohol
Finish: warm and fuzzy
Balance: a bit screwy but nice

Nose: fruity, apple, walnut, good wood, plums emerge
Taste: intense fruit, concentrated, slightly sweet, cherries in back
Finish: warm, deep, flavor does not reach, water opens it up slightly
Balance: slight let down towards end but very nice

Finish: warm, but a little short again

Balance: alcohol seems to overpower flavour a little

Located halfway between Scotland and Spain in a small village in Burgundy, France, Michel Couvreur has new make Scotch single malts distilled to his specifications which he then ages in high quality casks he sources from various small bodegas in Spain.

He's a rare and strange phenomenon in the world of whisky but his product is generally regarded as some of the best whisky out there even though he has caused controversy stating that the cask aging represents 90% of the final flavor of a whisky and that the distillery of origine is near irrelevant.
